Coastal region

TERROIR / SOIL:
Cool southeastern facing slopes of decomposed granite on clay sub soil from the Darling and Stellenbosch regions. These soils have great water retention.

VINEYARD AND CLIMATE CONDITIONS:
13-18 year old vines planted on a vertical trellis system allows for easy foliage management, ensuring a controlled exposure to the sun and slow development of the berries to ensure phenolic ripeness at lower sugar levels. The vines are 7 – 25 km from the cold Atlantic ocean and have an average temperature of 9 – 19 °C during winter and 13 – 29 °C during summer with an average annual rainfall of 450mm.

WINEMAKING:
100% Cabernet Sauvignon grapes were harvested from selected vineyard blocks. The berries were hand sorted to select only the best fruit for fermentation in stainless steel tanks. The berries underwent a further 21 days of extended skin maceration to allow for tannins to soften. The free run juice were barreled down to allow for malolactic fermentation and matured in a combination of 50% first fill French oak and 50% second fill. The wine matured for 16 months in barrel before individual barrels were blended.
